This mixed fermentation process incorporates fruits such as pineapple, coconut, and
sugarcane together with specially selected starter cultures. Fermentation takes place
under restricted-oxygen conditions for more than 192 hours, allowing for greater
flavor complexity, sweetness, and aromatic intensity.
After fermentation, the coffee undergoes approximately 25 days of sun drying,
followed by an additional 5 days of mechanical drying to achieve the ideal moisture
content and ensure quality consistency.
Through the Culturing process, the coffee develops vibrant fruit characteristics,
enhanced sweetness, and remarkable complexity, resulting in a distinctive specialty
coffee experience with exceptional character and depth.
